Fully washed coffees are the most common type of fermentation. The beans are extracted b y using water to sort and ferment the cherries before they are dried out. Wet processing produces the best clarity of flavour.

Sundried/Natural Coffee
Most of the coffee from Ethiopia is naturally processed, which means that they are sun dried with the cherry fruit still attached to the coffee bean. This processing method gives the coffee fruity or winey tones and bright acidity
